I’ll Have High Cotton’s 199

I was just in Charleston, SC with my friend Nicole to celebrate her birthday. It was a fantastic long weekend. We walked, and ate, and drank, and walked, and ate, and went on a ghost tour, and drank. The food scene is incredible in Charleston, and the cocktails didn’t disappoint either. There was one cocktail that stood out among the rest, however– High Cotton’s 199. This beautiful drink is just pineapple-infused orange vodka, which is shaken hard, and poured into a chilled martini glass. The 199 is slightly sweet, very refreshing, and dangerously deceptive (it’s all alcohol after all). I looked at Nicole, while sipping my second, and said, “I’m making this at home”. She of course responded with, “Obvi.”

So, here we are. A few days ago I bought orange vodka (Stolichnaya), and pineapple. I dumped pieces of pineapple 3/4 the way up a 32-ounce Mason Jar, and poured the orange vodka over top. I screwed on the lid, and set it aside on my counter where it sat quietly for the next 48 hours.

Two days later, I strained out the pineapple, and poured 5 ounces of the glorious liquid into an ice-filled cocktail shaker. I shook that liquid into submission (30 seconds to be exact), and strained it into a chilled martini glass. What emerged was the most beautiful drink. Thanks to the pineapple, the cocktail had a layer of foam on top, like a bed of sparkly snow (see also French Martini). The drink’s texture was soft and smooth, and the taste was divine.
